As far as I am aware, Bruce Lee was actually a capable martial artist outside of movies. If I recall correctly, Lee even invented his own form of Kung Fu. Most actors, these days at least, use that fancy, largely useless form called 'Wushu' (I think, might be spelled with 'o's instead). But outside of the movies, they aren't all that good -- they might know some basics, but for the most part that is their limit.

I think he was one of the poor ones with good fighting skills which slowly then came into showbiz

Jackie Chan did all his own stunts and did everything that a human could actually do until he made "The Tuxedo". Most of the was computer animated. That was a big letdown. Arnold would be good against a metallic cyborg 1000 years from the future, but against a 4"4 angry japanese guy avenging his fathers death? wouldn't stand a chance. It's a matter of opinion though.
Good Lord, the first person who says "Chuck Norris", I will shoot dead. I am not sure who, but from what i understand, Shaolin is badass, but thats only from what i heard, which includes it being banned in China for some time ( Not sure of dates or if it still is ).
