You have to remember that many of the AT weapons have a number of aim points on them for different ranges. So you often don't know which represents the crosshair until you've fired. And if you missed with that first time faust... you will go :bawl:
So... always use the upper most aim point ;)

In real life yes... but they wont work the same way ingame. Not that people can really judge distance correctly ingame anyway... people just use their single aiming point and guess how much to lead. Far easier that way.

i disagree the bazooka has better sights in my opinion.

it works exactly like in real life.... and i think the bazooka has far superior sights to the panzerschrek, but the PIAT has even better sights.
Its much easier to aim in the middle of a circle than the middle of a square.
well, in reality the Piat sights are pinholes, but thats no good for 3d sights, you cant see jack.

If I recall to aim a panzerfaust you line up the tip of the warhead with the aiming point you're using... so to use the 30/60/100m mark you'd have to change the angle of the faust depending on which point you're using for aiming. Which you can't do in FH. In real life you can't just look through a single hole in a single sight and expect it to work, you have to align the front and rear sight. But then in FH there is no concept of front and rear sight since it's essentially using an iron sight to represent a crosshair.
The old UT mod Infiltration had a button to switch between aligning the different ranges for the grenade launcher. But of course no-one used it since it was so time consuming and it was just easier to estimate anyway...
