Wing Commander III or Ultima VII. Runners up are Baldur's Gate (I & II), Planescape: Torment and Betrayal at Krondor. honorable mentions to Half-Life, Half-Life 2, Sam 'n' Max Hit the Road and The Elder Scrolls saga.

Console Single Player: Halo/Burnout series.

Console Multiplayer: Halo

PC Single Player: Freelancer/Sim city 3000 Unlimited

PC Multiplayer: Any of the source engine games from vavle.

Halo's story is great, and the gameplay makes each time you play different. You have more than one way to complete an objective. The levels are massive, the soundtrack is awsome, and the Multiplayer has yet to be beat on the consoles.

Burnout is crazy. Over the series they have added new elements to the game that make the pervious installement seems tame. The soundtrack in the series has been well done, and the number of vehicles to choose from is wide.

Freelancer is just like Halo. Great story, tons of gameplay, ect. I never tried the multiplayer for it though.

Sim City 3000 Unlimited is the peak of the sim genre. Everything in the game was perfect. The editing kit included with the game made adding new structures a breeze.

Valve's steam service and the source engire have made their games the best MP expirences I have ever played. Bugs are quickly found and taken care of. The source engine gives great detail on moderate PCs. It is easy to find servers, and the people in the servers are generally a good group to play with.
