TIE Fighter - I just loved that one.
Dark Forces and all the following Jedi Knight parts weren't bad either.

I added/fixed a couple of options (Jedi Knight II and Jedi Outcast would have been the same thing ;)).
That said, my choice is the original Dark Forces (which I added :p) back from the days of DOS-based games! Can't get better than that. TIE Fighter would be a close second. Seriously... the older games are much better than the newer ones. Except the first KotOR, maybe.

Jedi Academy had a fun multiplayer that I played with my best friends for a long time. I recently quit it, because it taught me the pointlessness of clanning. I fail to see the point of a militaristic organization in an online game, and also realized I could spend my time far more usefully. But it was fun while it lasted.

I would have to say the Mysteries of the Sith expansion pack for Jedi Knights. It is the closest to the actual Star Wars universe instead of just another shooter with enemies having skins resembling characteries from the movies.

Jedi Outcast, a non human villan, thank the force. The plot was good aswell. KOTOR at a close second, the storyline seemed ripped off the films, but it was fun.

KOTOR by far, it was the closest thing to actually feeling like you were apart of the game, rather then feel like your playing a character.
