There are many professions that people regard as important & respectable like nurse, police officer, firefighter, judge and night watchman. But if you would be forced to pick just one profession that you respect the most, what would it be and why?
I think there's a difference between a respectable profession and a profession, or professional you respect. Respect is the kind of thing that you have to earn. I don't think you can just give it blindly to any group or authority. All the jobs listed are respectable professions, but I would not say that I respect any of them totally, or any profession for that matter.

Nurses/doctors for me.
They work long hours under difficult and stressful conditions, but provide a vital service, often without real thanks.

I find this hard to answer, respect is a funny thing. I can respect people because of the amount of knowledge it requires for such a profession. (Eg. Doctor and so on), Yet, In N.S.W. we have a huge shortage of doctors and nurses, and many of those we currently have are dubbed incapable, or not fit for the job.
So for Education and professional ability, I would say Doctor, teacher, and various other related categories,
but for my personal experience with each profession, Police Officer and Fire Fighters, sometimes even the Soldier.

I don't respect anyone based on their job.
Thats right we should not judge on their job.
Soldier, since they are fighting for our freedom. Police officer is close second though.

Firefighter. They run into unstable or burning buildings to selflessly save others lives, often without caring about their own fate to do it. I can think of no other profession that holds a candle to the ones that sign up to be fire-fighters.
