I don't see why white/silver would be impossible. You just need to use an appropriate jewel with little-to-none pigmentation. And as to my understanding, black is impossible because technically, black is the "absense of color" and "absense of light." The gem focuses the light into a refined beam of energy -- if the jewel is too opaque, I think it burns out the lightsaber.
But on the topic at hand, I don't know of this "yellow" choice you all speak of. I use GOLD.
And as for saber stance, I usually switch between dual and staff on the fly depending on threat assesment. More than two Jedi, I use the staff. Two, dual (or two-handed) gets the job done comfortably. For other encounters, I just use the single blade on the staff.

Gold? It has always and oficially in the Star Wars universe yellow, not gold. However, that's not my choice. Call it what you want. :)
I think that the lightsaber color really looks good if it compliments your clothing. On JA, my clothes are blue and my saber is green.
