I know how to assign textures to models but how to you get them where you whant them to go
select the mesh and then go to "Window" and open the Texture Coordinate Editor

Thanks but there are diffent options front top right and so on but if change one thay all change
As well as selecting the whole model, you can select parts or individual faces of the model, then open the Texture cordinator to texture them seperately. Try experimenting with the select/faces option and using 'ignore back faces'. Also remember you can hide any bits of the model, so you can get to hard-to-reach bits, and then select them for texturing. Hope that made sense;)
Recommend that you first try something very simple, say a cube with a texture map that will give you distinct paterns or words on each side. This will help you get the fundamentals down.
