I'm not overly fond of the saucer separation gimmick. Worked on the Galaxy and Prometheus yeah, but they were built with the purpose. Since the day we saw the Galaxy split, many people have speculated that any ship with a saucer, can detach it from the hill. This ranges from the Excelsior, through to the Akira, and eventually, Sovereign.
There is a good chance that this picture is showing what is indeed the ability to separate, I wouldn't like to see it though, not unless they decide to destroy the JJ Prise, and do a 'Generations' scene, with the saucer crashing on a planet.
Would be something to note, the original TOS Connie was suppose to have this ability, though it was never used.

wasn't it used in the animated serie or the comics? I thought i saw a picture of it.. Where she detaches itself from the engineering hull and fires a volley of phasers from the saucer.

Well, I do remember seeing an early storyboard for tmp where the Enterprise seperates because the Klingons were attacking it instead of V'ger at the very beginning . Maybe thats what you're thinking of?
