Ok Twilight and In a Mirror Darkly were the two that stood out for me as there was a good story and niether violated canon as 1 was in a alternate timeline and the other was in the mirror universe
In "Horizion" Archer says he gave thought to serveing on a cargo ship a few years before Starfleet was established Im guessing he was in his early or late 20's thus Starfleet was probably established in the late 2120's or early 2130's.
