I typically open up one of the default maps to edit it in the map editor, and the planet that shows up in the loading screen is Alderaan even though the planet name in the map properties is not Alderaan. Any reason for this?

you misspelled the planet. check planets xml

How can you misspell the planet when you never changed the planet name from the default map? EDIT - I found out after saving a map that it adds symbols to the end of the planet name, such as "Endor:-"

There's another file other than planets.xml that has the planets listed. You have to add the planet in there, I believe. I think you have to add the planet in at least three different files, but I'm not sure. EDIT: Forget it, I see one thing and read another. I don't know what I'm talking about. EDIT II: Would it be under the MN_MP_LAND/SPACE in the mastertextfiles_english.dat? Would adding something there fixit?

What I meant was, I put the planet name as "Endor", and then saved it, I go to map properties again, and the planet name is "Endor:-" - which is somehow randomly added.
