All there basically is are a few tips on just running the tools and such, and some videos that play at the speed of light. Anything a tad bit more useful somewhere?
You mean like a tutorial that does all the work for you? No, there is no such thing. You need to learn the software first, then use the more specific tutorials. There are going to be very few specialized tutorials that will also try to teach you how to use your software. Use the tools available to you.

there should be a section called others somewhere below others you'll find a link : photoshop & gimp tutorials there you'll find easy tutorials for creating textures :)
about modeling ..... look at youtube you'll surely find some good tutorials there
I can't open the jpeg skin images with GIMP now all of a sudden. Says the directory can't be found. I can't access them when they're located in my documents?
Did everyone do all of the new models from scratch? Seems a little outragous. Well General Grevious had to of been obviously. There's nothing explaining what the heck you do when your actually finished.
What's outrageous about making a model from scratch? There are plenty of resources available to explain the full process.

I would also suggest taking advantage of the user reference guide. It's pretty easy to figure out and find if you don't already have it installed. It explains most things, but for the more specifics things like game modeling, finding someone that can teach you is awesome.
