The rocks are models in base JA. The bridge is made with quadsoup (meaning they made a bunch of 4-sided brushes and made the bridge by dragging vertices/edges to form the shapes).

To be honest, everything in Q3 is made with triangles.
There are cheat ways to make them in groups, and there are tools to make things easier, but everything is triangle-based.
The terrain is very, very easy. You can either use low-poly trisoup/quadsoup (just make it at a high grid size), or you can use EasyGen to generate terrain using modifiers.
Patience, use the force. You can do it. :)

Clipper tool should help you get rid of the sharp edges.
(I'm a hypocrite because I don't even use it.....trying to get in the habit.)

If you don't want to make those rocks yourself, there are several to be found as md3-models, for example in "map_objects/desert/" ;)
