More specifically, I want to convert the Galak_mech model as well as the minecrab model for use in Jedi Academy Multiplayer. How do I do this? I would also like to know how I can convert models from JK3-JK2 so I can play as Rosh and the other Jedi Academy exclusive players in JK2.
Get XSI Mod Tools, import the models, import the kyle model that came with the JA SDK and rig JA models to that skeleton as it's the JK2 one. Export to dotXSI 3.x, compile to .glm with assimilate and pack it all up in a pk3.
Not so simple of a thing to do, well for me it is but I don't know your extent of knowledge in enveloping 3d meshes and the compiling process.
I'm not sure if this was the right place to ask but : why has nobody ever recorded a video tutorial of the weighting and compiling process for JA playermodels ?

written tutorial about enveloping/weighpainting in xsi instead of making new bones you use the bones that come with the kylemodel another way: changing weights in the weighteditor
^That's the reason why. Why make a whole new video when there are already SO MANY out there. They aren't using a JA model or skeleton, so what, you can still easily learn from it. Too many people just want things spoon fed to them and aren't willing to do it the same way how everyone else knows how and it's just to google one of the many tutorials on the net.
