It's obvious possible to add new characters and models to the menu when choosing a character, although is it possible to limit who they can be?
IE: removing jedi_hm from the choices of characters to play as. Possible?

Could you link me? All the tutorials I read only talk about adding new models.
There is a menu file that list the models in the species menu. You should be able to delete any unwanted models from there. I may give this a try myself later.
It uses the UIscript: "getcharcvars". From where I don't know. Although I did remove the reference in the MENUS.str (I'm pretty that's it's name) but that only handles the names of the species.

I think all you need to do is find the folder of the model you want to remove from the list and delete the playerchoice file.
I'm pretty sure any model that has a playerchoice.txt file in it is included in the menu. Although I wish there was a way to 'null' the file so that I didn't have to delete it. I tried commenting out everything in the file, but that just takes away colors. I was just hoping to make a mod that only let's you be certain characters.
If removing the file would remove the characters then renaming it something else should too. Try putting something in front of the file and name it something like remove_playerchoice.txt.
The One and Only;5411652playerchoice.txt is only necessary for the color options, it doesn't affect whether or not the model is usable. Even if you did make a mod with it removed or altered, the game woulds still find the original in the assets folder.
