Is there a way to open the models from jk3? i mean the models that are put in there already

yep, open the asset1.pk3 file and look under models.

model.glm, you can edit some of the models if you have 3d modeling software but they wont be so easy to put back in the game. youll have to re-rig them to the skeleton and recompile as a new model.
When i try to open it with gmax it doesn work? do i need some other program to make it work or?

You need 3DS Max and the .glm importer for it that comes in the SDK.
