You can modify the animations.cfg, and switch around existing motions, or you can download Dragon and make new ones.

A number of RPG clans I have been involved with created new stances with Dragon, added them to the end of the animations.cfg as new lines, and then added them to individual sabers using the .sab file. Great for clans, especially if you're savvy with Dragon.
