If you're looking to, for instance, make branched dialogue where one branch fires if you're male and the other fires if you're female, all you need to do is add a conditional script to check for gender. So if the character is male, but you've set it to only fire if the character is female, the male character will never see the dialogue.
Luckily the scripts already exist in-game, so you don't need to worry about making them. The male script is "k_con_ismale" and by extension I assume the female script is "k_con_isfemale". The name of the script should go in "script that determines availability" or a similar location, depending on what editor you're using.

I don't know if there's one that exists, but you could pretty easily make one. Well, 'easily' is a general term. You'd just need to have a script that only fires if you're one of the three Jedi classes.

Because when I try to open up Zaalbar's dialog, which I edited and put into my Override folder, the box appears white. No Root, or anything.[/COLOR]
You can't really do dialogue editing in KotOR tool if that's what you're trying to do. It gets buggy. You'll need to open the dialogue, export it, then edit it with DLGEditor. As for making scripts, I'd recommend you grab a NWN script generator. The engines are the same so much of the content is interchangeable, as far as scripts are involved, and the bits that aren't you can always ask about. :)
I'm by no means a scripting expert. I'll try to help you, but I may end up forwarding you to the community scripting gurus. The script we were talking about earlier should be simple enough, though.
