Except. He uses Ataru and Consulars don't use combat mostly. I'd say he was a bit of Guardian and a bit of Consular.
Even Consulars need to know how to use a lightsaber. ;) And Ataru is actually a very Consular-like form...well, its weakness is one that Consulars could easily overcome.

Alright, see? Now THIS is the part where people tend to screw up. I have to say that he is a Jedi Guardian. Dracon, just because he has a green lightsaber doesn't mean that he is a consular. And Carter, you said yourself that Windu was a guardian. Qui-Gon was THE best lightsaber duelist of the Jedi in his time. Plain and simple. The only jedi that could beat him was Yoda. Qui-Gon even beat Windu more often than not. But he lost against Maul, mainly because of age. Obi Wan was far younger than Qui-Gon, and even though Obi-Wan was older than Maul, he wasn't by much, and he was able to show him a trick or two. Qui-Gon is a Jedi Guardian.
Eh...he was a good duelist, yes, but that's because he was a good Jedi overall. Go read Qui-Gon and Obi-wan: Last Stand on Ord Mantell and you'll see why he's a Consular. ;)
Or, just rewatch EpI (if you can bear it... :p). In the beginning, we learn that he was called in as a diplomat, a typical Consular profession. On Tatooine we see how he does things the hard way, when brute force would be much easier. And we also learn of his philosophical view of the Unifying Force. He's a Consular. It may not be as obvious as Yoda, but he's a Consular.
