Jango Fett was a Mandalorian, as was Boba Fett, and they both looked like normal humans, so...

Hmm. Not in the games. But this was Mandalore the Ultimate under the mask.

It's straight off Wookiepedia.

Whilst most Mandalorians encountered are human, they were pretty much whatever species, or examples of species that fought with or were enslaved by or born to the Mandalorian Clans.

They were originally a species - The Taung - but many, many generations later they were a culture comprised of mostly humans with some non-humans aswell.

Mandolorians are human now, such as Jango and Boba Fett and of course the clone army, specifically the 501st division.Hence why when the clone army was made they got Jango to help train them and he invited a few friends to teach them some mandolorian ways

well, dont ask me.....don't think there was ever a time that the tuang were actually 'seen'by another character,if you get me,they were tuang before revans time......so way before any time of yoda etc,its probably just another one of the 'mysteries of origin' that star wars always seems to bring up

Taken from Wookieepedia

The Taungs, later known as the Mandalorians, were a warlike Near-Human species with gray skin that dominated the planet Coruscant thousands of years before the rise of Humans.

Mandalore the Ultimate himself was a Taung, but most Mandalorians around the time of KotOR were Human, because he started recruiting outsiders to the crusade. I don't believe it's ever explicitly stated, but the Great Sith War probably destroyed the Taungs; Mandalore may very well have been one of the last. He was the last Taung Mandalore, at least, and after the Mandalorian Wars all Mandalorians were Human.
