Boot into safe mode, try hitting F8 before the Windows loading screen appears...or it it during?

I have a boot menu...so I can set it on a text menu to do so...

Reset the display there

For the record, when you set display settings, there's a confirmation window that makes you click "OK" within 15 seconds, or else it reverts back to the previous settings. I'm guessing that since you've already rebooted, though, that's no longer viable in this case.

If you ever manage to do it again, just leave it for a minute and see if it goes back to the previous settings.
