If you can wait six months you should. Intel 45nm processors are going to come out very soon.
Though if you cant wait until then and would rather spend more money later on to upgrade should go with the 680i motherboard. Now for memory I would recommend getting Newegg.com - Patriot eXtreme Performance 2GB (2 x 1GB) 240-Pin DDR2 SDRAM DDR2 800 (PC2 6400) Dual Channel Kit Desktop Memory - Retail and overclock it once your system is stable. Sorry about the long text on the link. The forums seem to add it.
If you want Crossfire, I'd go for an Intel 975X board (e.g. abit AW9D). If you want SLI then as ^ said an nForce 680 board will probably be your best bet (abit IN9 32X-MAX).
If you don't want either, then go for a (slightly) cheaper Intel 965 board. abit QuadGT comes to mind. :p
ASUS, MSI, Gigabyte and the like all make equivalents but I like abit, so meh.
Maybe you'd better tell us what processor you picked out.
You might just want to consider a 8800GTS or a 8600GTS, they are DX10 so they are more future prof....
There's no such thing as future-proof in this industry I'm afraid.

Which implies the other options are future proof to begin with...
