I use iTunes for music because it just works damn well with my iPod and OS X.
As for movies, I usually use either Quicktime or VLC, leaning more towards VLC since it plays more file types.

i like Winamp the best, but i am starting to like Quicktime's compact size and easy interface.
I use iTunes for music and WMP10 for movies. I know there is better out there than WMP, but it is what I am most comfortable/experienced with.

WinAMP would be my favorite if it just didn't act poorly with CD-playback. Also, I'm not even sure does it support plug-ins for Ogg Vorbis, Matroska, and DivX playback... So I ended up to a bit different solution: ZoomPlayer. Not as good in the interface as WinAMP, but does the playback well enough.
Winamp > Everything else. Simple. Get it. And yes it does have built in support for Ogg Vorbis. In fact, as long as you have a codec for it, Winamp will play it. Apart from that, it is teh 1337. 'Nuff said.
Winamp. The plug-ins are great, and there are more skins than fish in the sea. :p
Yes, it will play anything that you tell it to. My favourite media player. :)
