So how many Jedi did live? So far, I know of: Yoda Obi-Wan Mace Windu Olee Starstone Quinlan Vos Jambe Lu Deran Nalual Klossi Anno Nam Poorf I'm betting that Etain Tur-Mukan and Bardan Jusik also survive. We'll have to wait for Republic Commando: True Colors to see, though.

Also, Enchu Shegon lived. If you don't know who he is, he was a jedi who fought in the first month of the Clone Wars. He killed one of Doku's sith adepts, but because he brushed with the dark side, he became a hermit on some planet in the outer rim. He was found later by Lia Organa a few months before the battle of Yavin.
There were a few other jedi who joined palpatine.
