The Sith Interdictor, or the ship itself, The Leviathan?

I would chose either a Dominator Class Destroyer, or the Lusankya, going back to my Fandom of Wedge.

If I were to choose a Fighter, It would be a X-Wing, once again, going back to my Fandom of Wedge, but also because of how versatile the Fighter is.

I think a Mon Cal of almost any class is the way to go, personally - spacious, roomy, well-shielded, nifty hangers, not to mention many of them were designed as luxury liners, making them all the more comfortable. Plus, they generally look nice and are rather practical in most situations due to their design.

A-Wing

It's fast, maneuverable, and has a sleek design. It also doesn't require a crew or prohibitive maintenance. The only downside is that it has no astromech droid, and I have no idea how to pilot one.

Only if the shield generators are destroyed though...

MC Cruisers for practical use FTW!!!

Seriously though, if combat isn't taken into account, then I really don't think there couldn't be anything better/more practical than a good MC Cruiser. Nice interior, nice hangar (to put in any sort of smaller craft you also want inside), great shields, good hyperspace speed, good sublight speed, wonderful living quarters, plenty of food storage, decent-enough defenses to ward off most pirates, practical crew requirements, good geometric design (as opposed to the Leviathan, where you have to go all the way around just to get to the other side), great eating quarters, nice colors, and so on and so forth. Luxury all the way. :D
