I think I'd rather hide in their engine wash, then approach the shield generators in an EV suit. I'd cut off the pylons with a welding torch, and smear the bridge window with shaving cream. Hopefully some incompetent junior officer forgets that they can pilot using instrumentation, and collides with a large celestial object.

Use many tiny exhaust vents spread across the surface instead of one that just happens to be just the right size for a proton torpedo to go through. Each would also be covered with ventilation slats and grating, like any proper vent would have.
A Defender. I know, no hyperdrive. But great weapons system, I think, plus I'm not much of a traveler.
The Naboo Star Skiff.It's pretty luxurious, a ship fit for a royal. First of, it looks pretty neat. Secondly, it has beds, enough elbow room, room for a few droids/companions and probably a toilet, which is really a basic necessity in my book if you want to travel through space for a while.
