I think the tauntaun is the only one we saw butchered (when Mr Solo opened it up in Episode Five).
Atlough I would prefer a roasted boar :) That is not some alien-meat... who knows which alien creature is poisonous, and which is not :) ?

Tauntauns have a lot of fat which is needed to survive on Hoth :r
and Mynocks are probably filled with electronics :borg:
